With more than 1400 hectares of vineyards, Geneva is the third-largest winemaking canton in Switzerland. Around this international city lies an oasis of greenery and tranquillity which enjoys a dry, sunny climate. The first Swiss canton to introduce an appellation of origin, Geneva has spent a quarter of a century focusing on high-quality viticulture and has introduced major diversification into its vine mix. As in the rest of Switzerland, Gamay, Pinot Noir and Chasselas form the majority, but they are now also seeing competition from Gamaret, Merlot, Garanoir, Sauvignon, Pinot Blanc and Viognier.

Finally, we wanted to highlight the lake, a key part of Geneva’s soul. Known locally as ‘Léman’ but by the rest of the world as Lake Geneva, this lake is home to around thirty different species of fish and one crustacean. Discover talented chefs working with flavourful species such as fera, Arctic char, pike, crayfish, perch, lake trout or monkfish. Served as a tartare, à la meunière or seared on one side, these native fish are every bit as good as the noble species imported from the Atlantic or the Mediterranean which are found in all of the canton’s top establishments. In addition, the chefs and sommeliers we have encountered have confirmed that the diversity of Geneva’s vineyards enables subtle pairings with the whole spectrum of fish produce. Although Chasselas, Sauvignon Blanc and Chardonnay offer timeless pairings, our contributors have also managed to create miraculous marriages using Pinot Gris, Savagnin Blanc, Gamaret and oak-aged red blends.
