The most important thing is to allow yourself to experiment and play with it. Trust me, you can't break it! One screen, some visual widgets and the basic touchscreen actions: touch, long touch.
If you can find a more basic and user friendly UI I'm looking forward to hearing about it.
You basically have a single screen app containing:
* a tiny menu section at the top (use single clicks to launch the menu - which will open the todo-browser dialog)
* the todo screen in the middle (this contains the colored checkitems for your TODO list)
* an add button at the bottom (use a short touch to add new checkitem to your TODO; use a long-touch to save the current TODO and create a new empty one)

* is initially empty
* use the add button to insert new checkitems
* you get max 8 checkitems on a todo list
* you can touch a checkitem to change it status (from unchecked to checked)
* you get two checked states: ok-check and inverted-check (e.g. use the latter for when you attended to that item but things went bad and couldn't finish it; or just use your own imagination to come up with a use for it)
* you can continuously cycle the states of an item (checked, ok-checked, inverted-checked)
a long touch on a checkitem will show you what that todo-item on the list is about and allows you to change that information
